Bacon Wrapped Scallops with Roasted Asparagus

I have a serious love for scallops. And bacon. I decided to combine the two and give him a treat for dinner. Lets get real though, a boot in bacon would be good. I am also both a huge fan of asparagus and my favorite way to eat most veggies is roasted. They just get a really delicious flavor and become super tender. The asparagus also kept it's little bit of crunch. No one likes mushy asparagus!


Bacon Wrapped Scallops with Sea Salt and Garlic Roasted Asparagus
Serves 2
12 Scallops
12 slices of bacon sliced in half
1 lb of asparagus
2 tsp garlic powder
1 tsp sea salt
Olive Oil

Preheat the oven to 425. Wrap the bacon around the scallops and secure with a tooth pick. Place on a rack on a baking sheet and put in oven. Trim the asparagus and remove the woody part at the end. Liberally dress the asparagus with the olive oil, garlic powder and fresh ground sea salt. The scallops need about 20 min to cook while the asparagus only need 10-15. The bacon will get nice and crisp and the scallops will still be just perfect with their buttery taste. The asparagus compliments this seafood so nicely. It sounds fancy but is super easy and super delish!
